Coconut ricepudding with juicy mango-lemon creme

Hi steemies 💛

For all the sweettooth i made something sweet for lunch today.

Ingredients:

For the ricepudding

125gr round grain rice
400ml coconutmilk
3 tbspn coconut blossom sugar
1 tspn vanilla extract
250ml plantbased milk ( i used almond milk)
Zest of one lemon

For the creme

1 mango
The juice from one lemon

Frozen berries

  1. Put all the ingredients for the ricepudding in a big pot and simmer for about 30 min on small heat. Keep it stirring until you get your perfect consistency.

  2. Blend the mango with the lemon juice. And your creme is done. You can of course use every other kind of fresh fruits.

  3. Put the finished warm rice in a bowl and top it with the creme and some frozen berries.

This meal you can perfectly prepare the day before and make your colleagues at work jealous with your super tasty and healthy takeaway meal.
