Got very addicted to this pumpkin it came early in the season, I bulk brought them and stored them. And I've been keeping the seeds to plant next year.
The seeds are quite delicious when roasted but the pumpkin skin is the best part, when boiled with the skin on, the pumpkin tastes like chestnuts 😋
I made the full recipe on a short video but unfortunately I have been having trouble uploading to 3speak, so I'll write a description here.
First you fry onion, leak and garlic and any other vegetables of choice,
Add the red kuri pumpkin or any pumpkin with skin on
Add some tomatoes and water, spices of choice
Then let everything simmer until tender
Add coconut cream towards the end for extra creaminess
