By luck I already had a lone cucumber in my fridge that needed to be used. The only way I enjoy eating cucumbers is paired with avocado. Luckily I also had a lone avocado waiting to be used up.
And so I present to you, Spring Rolls with Peanut Sauce!
The fillings consisted of:
- cucumber
- avocado
- smoked tofu
- carrots
- mixed lettuce
- rice noodles
The sauce consists of:
- peanut butter
- rice vinegar
- tamari
- maple syrup
- sriracha
- ground ginger
- garlic powder
