Roasted Citrusy Fennel is my contribution to this week´s Qurator's: Hive Top Chef! | Orange.
Ingredients:
- 1 big fennel
- 1 lemon
- 1 mandarin
- 1 blood orange
- 1 teaspoon of sweet red paprika powder
- 1 teaspoon of vegetable salt
- 3 tablespoons of olive oil
Preparation:
- Finely slice lemon, mandarin and orange.
- Halve fennel and roughly slice it.
- Drizzle it with olive oil and a tablespoon of lemon juice. Add sweet red paprika powder and vegetable salt or salt and toss it well.
- Cover the baking tray with baking paper and place fennel slices and citrus slices on top.
- Place it in a preheated oven at 200C, for about 30-40 minutes.
