An anniversary is not complete without a cake and I've made a nice coconut cake to celebrate this anniversary with my family, I also prepared a tray of sweet orange to complete the celebration.
I also prepared a vegan butter icing to coat my cupcakes and make it more beautiful and appealing to the eyes.
Let me quickly share my exquisite recipe with you but first I want to invite @nkemakonam89 to participate in this contest using the link below

2 and 1/2 cup of flour
250gram of vegan butter
125gram of sugar
1 big coconut
1 tablespoon of cinnamon powder
1 tablespoon of vanilla flavor
1 tablespoon of baking powder
Icing sugar 500gram
Butter 125gram
Food color (green perfect for plantpoweonhive)
Pearls for design
I mix my butter together with sugar and mixed it for more than 5 minutes using a spatula until the butter became fluffy .
I mixed all the dried ingredients together and set it aside in a clean bowl
I grate my coconut using a grater and I extracted the water .
I added both the water and chaft of the coconut to my flour mixture and mixed it together using my hand mixer.
I mix my butter and sugar together with the flour mixture,
I added my cinnamon and vanilla flavor to enhance the flavor .
I greased my cupcakes pan with some butter and flour ,
Then I add my mixture into the cupcake's pan and baked it till is ready .
My coconut cake is ready and now is time for coating.
I mixed my icing sugar with butter until it is evenly mixed and I added a pinch of green food color to give me that perfect green color that I want and then stirred together .
I Poured it into my pipping bag and made some little decorations on the cup cake,
I also added some star edible pearl to bring out the beauty of my cake.
Lastly I arranged a tray filled with orange to compliment the cake.
