Vegetable sauce (vegan love)

Vegetable sauce is a versatile and nutritious meal that can elevate any food whether it's pasta, boiled yam , boiled plantain or a simple bowl of white rice just like mine.
This wonderful meal does not only add vibrant flavours of vegetables but also brings a healthy dose of vitamins, minerals and fiber and overall,it helps the blood cells build blood.

This great sauce is perfect for anyone seeking to eat a lighter, healthier plantbased food.

Vegetable sauce has been my mom's great secret to anyone who has anemia.
Aside it's nutritional values , it has a great taste .

Ingredients needed



🌻A punch of pumpkin leaf
🌻One full cup of red vegetable oil
🌻Three to four pieces of fresh tomatoes
🌻One teaspoon of salt
🌻One teaspoon of dry pepper or fresh pepper
🌻Some cups of water
🌻One medium sized onions



Duration



This is an easy meal that takes not less than 5 mins to prepare, less stress and above all great taste



How to make



The pumpkin vegetable leaf can be substituted for any other vegetable but in this case I used the pumpkin leaf

👉Wash the pumpkin leaf and transfer to a sieve to remove excess water ,
Cut with a sharp knife and cutting board (note: already cut pumpkin leaf can be bought directly from the market)

👉 Cut the remaining vegetables. The fresh tomatoes and onions and set aside

👉 Place your clean pot on your cooking stove,add the red oil and allow for some seconds

👉Add your onions, fresh tomatoes and peppers, stir occasionally

👉Add the salt and lastly add the pumpkin leaf and cover for some time

👉 Bring down and serve with any dish of your choice.
