Sprouts are usually healthy, especially for those who are following a healthy diet. Bean sprouts are most probably found in salads. Here it goes well with rice. My recipe is a mix of bean sprouts with cluster beans. Here, we go.

INGREDIENTS REQUIRED:

  • Bean sprouts - 1 cup
  • Cluster Beans - 1 cup
  • Onion - 1 medium sized
  • Green chilli - 1 or as per spice
  • Salt - as per your taste
  • Curry leaves

FOR COCONUT MIXTURE

  • Coconut - 1 cup
  • Cumin seeds - 1 tsp
  • Garlic - 2 or 3 flakes
  • Chilli powder - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Curry leaves - as per your taste

FOR SPLATTERING

  • Coconut oil - 1 tsp
  • Mustard seed - 1 tsp
  • Shallots - 1 or 2
  • Red pepper - 2
  • Curry leaves - one or two sticks

METHOD OF PREPARATION
TIME TAKEN - 15 to 20 min

STEP - 1

Soak the lentil overnight, in water, for atleast a day. After that you can drain the water and keep it in a strainer until the next day. You can see the sprouts in it. Which means it is ready for salad or curry or for whatever you prefer.

It's ready to get steamed. So steam it by sprinkling a little salt on it.

STEP - 2

Clean the cluster beans, by scraping the thick side part. Wash it well in water and strain it. Now cut it into small pieces and keep aside. Along with it, cut one onion and green chilli into small pieces.

Put all this in a cooking bowl with the required amount of salt and cook it in medium to low flame, until it gets cooked. In the meantime, get the coconut mixture ready.

STEP - 3

Coarsely grind coconut, cumin seed, turmeric powder, chilli powder and curry leaf. Keep it aside.

Once the cluster beans is cooked, add the coarsely grounded coconut mixture to it. Along with it add the steamed bean sprouts and close it with a lid for few minutes. After 2 minutes, take a ladle and mix them well for another 2 minutes. Now, switch off the flame.

STEP - 4

Time for the final process. Keep a thick bottomed vessel in the gas stove, add some coconut oil and gradually add mustard seed, one or two finely chopped shallot, Red pepper and some curry leaves. Once the shallot turns golden colour, put the cluster beans/ bean sprout mixture into it and mix it for just one minute. Afterwhich, you can switch off the flame. Its already done.

Note: If no coconut oil is available, you can very well go for any vegetable cooking oil.

It is ready to be served with hot rice. This is a highly nutritious food.
