How to Make Cake Sweet Corn Coconut

Traditional cakes have always been a variety of creations for culinary lovers, many of which are modified and become cakes with different nuances in the kitchen, resulting in delicious cakes that have a distinctive character and flavor.




Serabi Kelapa Jagung Manis


At first glance, the name is similar to serabi in general, and I have never tried making serabi cake. This cake has different characteristics and a very distinctive taste according to my tongue and the way it is made in the addition. Well the use of ingredients is very different from the serabi cake in general. Usually if the cake with the use of coconut and made with rice flour we call it apam cake, different from this cake they call it corn serabi.

I actually found this recipe on social media some time ago, I was looking for inspiration for delicious corn preparations. It turned out that this recipe appeared, curiosity with the use of simple ingredients made me want to try it at home. But there is something different about this cake and I think it is very distinctive, there is the addition of rice to the cake batter so that it gives a different texture. I have never tried rice added to cake batter at all. I think inj should be tried, here I will show you step by step preparation.




Ingredients Used

3 small pieces of corn
100 grams of rice flour
100 grams shredded coconut
100 grams of rice
400 ml water
65 ml instant coconut milk
4 spoons of granulated sugar
¼ teaspoon salt




Cooking Procedure


Step 1


Prepare a small size of sweet corn, then peel the sweet corn until it is all gone from the cob.

Step 2


Put the rice flour and rice and also grated coconut into the blender.

Step 3


Add instant coconut milk and water and blend until smooth.

Step 4


After blending add sugar and also salt stir until both dissolve in the dough.

Step 5


Then if all the ingredients are ready it's time to bake, prepare the mold and then heat and spread the cooking oil.

Step 6


Then take one ladle of dough and then add the corn topping on top of it, add as much as you want.

Step 7


Cook until brownish yellow or until cooked, don't forget to cover when cooking so that the cake cooks evenly.

Wow, the first impression of enjoying this cake is really beyond my expectations, it tastes really unique and certainly very delicious. The soft texture with the combination of corn topping pieces on top adds an amazing flavor. At first I wasn't sure it would work but after the first batch was cooked I immediately tried it ahhh this is really good. Sweet and savory with the perfect combination of ingredients, coconut milk and grated coconut gives a distinctive taste in my opinion.

I think this is a perfect recipe modification, very tasty and suitable for all groups. Now the sweetness that I added from the sugar is not too sweet because I don't like dishes that are too sweet. But if you want it sweeter, you can add more sweetness from the sugar. I think this is very tasty, and recommend you to make it at home either as a snack or breakfast like pancakes.
