Super fresh dinner for meatless monday.
Hello, dear friends and community greetings, today's post is for meatless Monday as well as the entry for @qurator hive top chef contest theme Fresh and i used the fresh vegetables to make my recipe.
Ingredients:
100 gram baby leaves mix.
25 salted olives
1/2 avocado
1/2 sweet red paprika
4-5 leaves of lettuce.
10 cherry tomatoes
2 carrots
1/2 red onion
1/2 cucumber
1 apple
6 stalks of asparagus.
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
pinch of salt
Roasted pumpkin seeds and sunflower seed with the salt.
1/2 tsp salt
1 tsp sugar
1 tbsp mustard
2 tbsp lemon juice
1/4 tsp dried oregano
1/4 tsp dried sage
1/2 tsp black pepper.
2 tbsp olive oil
Mixed salt, sugar, lime juice, mustard, dried oregano, sage, and oil made dressing.I used this dressing after I served portion.
1/2 cup cooked split chick peas
1 cup couscous
Washed and cleaned all vegetables.

Put asparagus in the boiling water for 2 minutes.
I used boiled water from asparagus in the khuskhus to soak it.
Now started making salad: first the baby leaves arugula, baby spinach, baby leaves of chard,
Then chopped crispy salad ( lettuce).
Some grated carrots and steamed asparagus.
Onion and paprika slices.
Cucumber slices and apple chunks.
Some cut cherry tomatoes, salted olives, roasted seeds.
Mixed all vegetables together in the bowl.

this is my way to serve this fresh salad.Can use different way next time.
