Yay it is me and my #whatscookingtoday! Sometimes, my time does not allow me to cook many dishes or maybe my youngest son does not allow as he wants me to accompany him in his activities.

At times like this, one pot meal is the way out! I will make sure there are vegetables and meat in this one dish.

Today is the cook-whatever-is-left-in-the-fridge kind of day, so I had to make do with broccoli, carrots and minced pork.

Well it is an easy thing to cook. Just stir fry altogether after dicing and cubing them!!!

I marinated my minced pork with some oyster sauce, chicken stock and white pepper after defrosted it.

Next, I finely minced some shallots and garlic as I always start with aromatics as such whenever I do the Chinese style of stir-frying. Brown the marinated minced pork up a little.

After that, I dropped in the cut and washed broccolis and carrots. I like to dice my carrots usually as it is easier for the young children to eat.

Seasoned them with some salt and pepper and let it simmer for a while to soften the vegetables. Added in some water and cover the wok with its lid for a while.

Then it is ready to be served! Best eaten with white rice which was proven when my youngest could eat really fast so we could be in time to fetch his brother from school. Am thankful for food and thank you for reading!!
