Ginataang Kalabasa/Squash with Coconut Milk



Hello everyone. A nice day to all of you!!

Though it's not a very nice day here because it always rains due to the bad weather, I still feel blessed that we are safe and healthy. Well, as I mentioned on my last post that I already used the multi cooker a day after we received it.

The first menu or recipe I cooked was a very simple but nutritious and delicious squash with coconut milk or "ginataang kalabasa". It's good to have a healthy hot veggie soup on a cold day. So, here it is!




Ginataang Kalabasa/Squash with Coconut Milk


INGREDIENTS:



  • Squash
  • Lady finger/Okra
  • Moringa Leaves/Malunggay
  • Malabar Spinach/Alugbati
  • Ginger
  • Onion
  • Garlic
  • Tomatoes
  • Knorr Cube Seasoning
  • Hot and Spicy Tuna(strained)
  • Coconut Milk
  • Canola Oil
  • Salt
  • Water


PREPARATION:




Extract milk from coconut meat. Set aside.

Wash the squash thoroughly, remove the seeds and then peel and slice.

Wash and cut the head part of the lady finger.

Wash and peel ginger, onion and garlic and then cut them in small pieces.

Wash tomato and then cut or slice it.

Wash thoroughly the moringa and malabar spinach leaves. Then set them all aside.

COOKING TIME:




Heat a small amount of canola oil on the cooker.



Sautee onion, garlic, ginger and tomatoes. Stir to combine and produce aroma.


When it's already aromatic put in the strained hot and spicy tuna. Stir and then cover for a while.


After a little while, add the squash as you continue stirring to combine. Then add the lady finger and pour in the coconut milk. Stir and mix carefully. Cover the cooker and let it simmer.

Arashi seems excited even though he's not allowed to eat this dish.



When it starts to simmer, season it with Knorr cubes and salt. Then cover again until veggies start to soften and became a bit cooked.


Then add the leafy vegetables, the moringa and malabar spinach. Continue to simmer until it is cooked.


Once it’s done, we can now transfer and serve it.


By the way, as I was cooking the veggies my husband came to me and volunteered to cook fried chicken as an additional dish.


So, he washed and cleaned some chicken wings and set them aside while waiting for me to season the chicken. I just coated the chicken wings with the combined seasoning and spices. Marinated them with egg, ground black pepper, and garlic powder. Then for the dry coating I only combined crispy fry, flour and cornstarch. Just enough amount to have a well balance flavor.


My husband did the frying. So, these are the first set of dishes we cooked in the multi cooker. I hope you enjoyed it.
