Chicken Patty with Veggies...

It is still gloomy and still raining from time to time here in our place. It's really good to just relax in this cold atmosphere and of course, pray for the typhoon to stop and for everyone's safety.

Well yesterday, I was able to relax a bit from my cooking routine because my daughter @tegoshei volunteered to cook for our viand or dish. She made and cooked “Chicken Patty with Veggies yesterday.

Well, she asked me to make the batter for the patty. That was my only task in yesterday's cooking activity, but we had so much fun doing it while listening to some songs on Spotify. Here is my daughter's chicken patty.

Chicken Patty with Veggies




INGREDIENTS:



-Chicken breast or fillet
-Onion
-Spring Onion
-Bell Pepper
-Garlic Powder
-Paprika
-Ground Black Pepper
-Flour
-Cornstarch
-Water
-Salt
-Canola Oil
-Ketchup


PREPARATION:





Wash the chicken breast thoroughly.

Wash and peel the carrot and grate it.
Clean and wash the fresh spices like onions, spring onions and bell pepper. Then slice them into small pieces.

*While my daughter was slicing the fresh spices, I was also making the batter. *

For the batter:




Crack and beat 1 large-sized egg in a bowl.
Add 4 tbsp of flour and 2 tbsp of cornstarch and then add 1/4 cup of water.
Add some seasoning or powdered spices like garlic powder, paprika, ground black pepper, and a pinch of salt.
Mix the batter thoroughly to have a fine texture. Then set all the prepared ingredients aside.


COOKING TIME:





Cook the chicken breast through air fryer at 160 degrees Celsius for about 10 minutes.
Remove the chicken from the air fryer and let it cool down.





After cooling down, shred the chicken fillet in small pieces. Then mix all the ingredients in a bigger bowl. First, the shredded chicken, grated carrot, onions, spring onions and bell pepper.



Then gradually add the batter and mix them thoroughly.




My daughter made a jumbo patty and some small patties. She put baking paper on a molder and brushed a little canola oil, so it wouldn’t stick, and then filled some mixed chicken mixture. Then put it in the air fryer and cook at 160-170 degrees Celsius for about 15-20 minutes.




After cooking the bigger patty, she cooked the smaller ones in the air fryer for just about the same time and temperature.



Here they are! She also did the plating and put a smiley face on the jumbo patty... hehe

We enjoyed eating the chicken patty by dipping it in ketchup.
