1 large eggplant (baingan)
2 tablespoons oil
1 teaspoon cumin seeds
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger, grated
1 medium tomato, finely chopped
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt, to taste
Fresh cilantro, for garnish

Instructions:
Roast the eggplant over an open flame until the skin is charred and the flesh is soft. Let it cool, and then peel off the skin and mash the flesh.
Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
Add the onion, garlic, and ginger and sauté until the onion is translucent.
Add the tomato and cook until it becomes soft and mushy.
Add the coriander powder, turmeric powder, red chili powder, and salt, and stir well.
Add the mashed eggplant and stir until well combined. Cook for a few more minutes.
Garnish with fresh cilantro and serve hot with rice or roti.
Note: You can also add some peas or paneer (cottage cheese) to make it more rich in taste.
