Fried Bihun - Rice Noodles Recipe

Hello everyone! Today I am going to share a detailed step-by-step on how to cook fried Bihun with a little touch of Indian cooking. Bihun is basically rice noodles. It is generally thinner than regular noodles. They make great meal for breakfast or dinner.

Ingredients

These are most of the ingredients. I will explain more below.

These are the rice noodles. Soak them in water for 20 minutes in advance before cooking.

These are mustard green vegetables. They are more commonly known as sawi over here. Include a piece of green chilli as well for spicy taste.

Wash the vegetables and cut them into pieces like this. They look a lot here but once you start cooking them, they will shrink a lot.

Cut the regular chilli as well. Then chop about two large onions.

Break four eggs into a bowl and beat them as well.

These are some condiments for flavouring. They are sweet soy sauce, salty soy sauce and cooking caramel.

These are some ginger and garlic which have been pounded using a pestle and mortar. After finishing pounding them, add a few bird's eye chillies according to your preference and pound them twice or so. Keep in mind that these are very spicy so add them after taking your health and preferences into account.

Don't forget to remove the water and place the noodles in a large bowl before starting to cook. Other ingredients needed are oil, water, salt, chilli powder and fish curry powder.

First of all, pour a small amount of oil into the wok and fry the eggs. This is because we only need to add them towards the end stage.

When they are ready, take the eggs out of the wok and place them in a bowl.

The oil you added earlier would have probably been used up so add more oil into the same wok. Once it heats up, add the chopped large onions and fry them until they turn slightly golden in colour.

Next, add the pounded garlic, ginger and bird's eye chili into the wok and mix them all well.

When the onions are starting to turn brown, add some chilli powder for more spicy taste.

Then, add some fish curry powder as well. It does add a wonderful taste to the noodles.

After that, add the vegetables and mix everything well until the vegetables start shrinking.

Pour some water if the mixture gets too dry.

Time to add the condiments. Add some of each of the condiments or any other condiments that you like. Then, add salt to taste. Let everything cook for a minute.

This is how it looks after adding and mixing the condiments.

Then, add the noodles into the wok and mix it well so all the ingredients get mixed with the noodles.

Add the fried eggs and mix that in as well.

Add the regular chilli and mix everything for the final time before turning the stove off.
