Homemade porridge yam with pumpkin leaf

Good morning friends😊, trust you had a great weekend. I will like to share what I made for breakfast today. Although it is my first time writing on this hive. Cooking is a passion for me because it feels so good having to create something so beautiful and tasty that makes people smile or feel happy afterwards. So here is homemade porridge yam with ugwu (a native name for pumpkin leaf in eastern part of Nigeria ).

List of Ingredients

A tuber of yam
Palm oil (Red oil)
Red bonnet pepper
Onion
Salt
Seasoning
Crayfish
Water
Pumpkin leaf (Ugwu)

Preparation

Slice the yam into small cubes, while you at this place the cooking pot on the stove thereby adding the adequate amount of water needed. After slicing the yam, wash with clean water( I do mine twice) then add it into the boiling water with a sprinkle of salt, leave to boil till it softens. Wash the red bonnet peppers, onion and crayfish, blend together.
Add the blended crayfish, pepper and onion to the yam when it’s already soft, add your preferred seasoning and salt to taste mix together, leave to steam then add the palm oil, allow to cook for a minute (reduce the heat so the seasonings can penetrate the yam well). Open up and mash them together, lastly add the pumpkin leaf (ugwu leaf). Your porridge yam with pumpkin leaf (ugwu) is ready.

Serving suggestions

Serve with a chilled fruit juice or glass of water for satisfaction
