Vietnamese Chicken Pho

Pho is a famous speciality dish in Vietnam, my country. Pho is usually cooked quite sophisticatedly and has a special flavour that once you eat it, you will remember forever. Today for the first time I tried my hand at the speciality food of my hometown. Pho has 2 types, one is beef noodle soup, the other is chicken noodle soup. Today I tried and succeeded with chicken pho. Hope the recipe that I am about to share below, will help you. If you come to Vietnam to travel, try this dish. I'm sure you will remember it after you leave my country of Vietnam.

Raw materials include:

  • Chicken (1 quarter chicken thigh)
  • Onion
  • Spring onion
  • Package of seasoning seeds to cook pho'
  • Fresh ginger
    -Dill
  • Red onion, salt, seasoning seeds, sugar.
  • Dried noodles.
  • accompanying vegetables; bean sprouts, cinnamon leaves, coriander leaves.

Making:

Step 1:Wash chicken with diluted saltwater. Then let dry.

Step 2: Boil the chicken. Put the chicken in a pot, add 3-4 whole fennel roots, 3-4 slices of fresh ginger, 1 tablespoon salt, 1 teaspoon sugar, half a teaspoon seasoning, 2 crushed purple onions. Then add 2 litres of water to the pot, bring to a boil, boil the chicken for 20 minutes, cover tightly. (This way of boiling chicken is the secret to fragrant chicken, not fishy).

Step 3: After boiling the chicken, remove the chicken and place it in a bowl. Continue to add water to the boiled chicken water and add about 1.5 litres of water. Add pho seasonings to the cloth bag included in the set of pho seasoning seeds. Put the pho seasoning inside the bag, then pull the drawstring back. Put the bag in the pot of water, let the remaining wire fall out, cover the pot with the lid, clamp the string, do not let the bag fall completely into the pot, because this may cause the spice particles to be damaged while cooking. falls out of the water, so when taking the broth will have to filter again, it will take more time.
Boil for 1-2 hours over low heat.

Step 4: Wash vegetables to dry; cinnamon leaves, bean sprouts, coriander leaves.

Step 5: Tear the chicken into small pieces, put it on a plate, put the chicken bones in the soup to cook for freshwater.

Step 6: When the broth is done cooking. Prepare another pot, add water to boil noodles and vegetables. After the water boils, add the dry noodles and boil for 2-3 minutes, until you see the noodles are soft, stop, take them out. That water continues to be used to remove the bean sprouts for 20 seconds. All to a bowl, or a plate on one side. When eating, add water and chicken and vegetables.

Step 7: When turning off the stove, the soup pot. Add 50g sliced onion, to make the broth sweeter. Then add the pho noodles to the bowl, add the soup to cover the pho noodles, add the chicken, add the bean sprouts and vegetables. And just enjoy. You can eat it with special sauce to eat pho.
