Sesame Toast With Goat Cheese, Walnut & Honey

Toast

Yesterday I made a salad for my boyfriend but I didn't have enough ingredients to make two of these meal salads so I was checking the cabinets to decide what else I could have for lunch. Although I could have made a chick pea pancake with some cheese and ham or a fried egg, I didn't feel like eating these. Then I noticed the Melba sesame toast that was still unopened. I bought these recently to eat with cottage cheese which was surprisingly tasteful when you add some pepper and curcuma with Celtic salt mixed. Sadly, I ate that too many lunches so I was fed up with that for a bit for now, lol so eating that was not optional either.

Goat cheese!

That's it, I looked in the fridge and remembered I bought some goat cheese a few days ago. Let me think, the thing I always love when I eat goat cheese salad at our favourite restaurant in the harbour is the fact that they melt the goat cheese on top of toast and drizzle some honey on top, it's soooo good! I decided to break the sesame toasts in half (more or less) cut a slice of goat cheese on top and roast them in the pan with a lid on top for a few minutes.

As you can see, I did nothing special, I didn't even add anything in between, I didn't take off the edges of the cheese but let the heat do it's work.

When you see the inside is starting to melt, you can easily remove the outer layer and scrape of the soft goat cheese and put it on top of the toast..

While waiting for the cheese to melt, I cut some walnuts in smaller pieces as I knew I was going to top these toasts with some walnuts, it's such a good combination!

Just spread them out on the toast a bit and then drizzle some honey on top, I promise you, it's delicious!

I really had to keep myself from throwing in a few more toasts but as I'm really taking care of my diet, I don't over eat anymore. I gave my boyfriend one to taste it because he never likes goat cheese and I felt he had to try it. Even he agreed it's very good! Win!

This is most definitely going to be a weekly lunch for me as I just like goat cheese so much better when it's heated up a bit instead of cold in a salad as I used to prep it whenever I did. I thought it was so much hassle heating it up, while all you need is some sort of toast/cracker or bread to roast it on. It's so simple, the honey also adds a real nice flavour to it, it works so well that I didn't even add any herbs to it.
