Indonesian Oxtails Soup (Sop Buntut)

Blessed Eid for the Moslems. Hope your Eid Al Fitr celebration has been a lovely one, surrounded by your loved ones.

Every Eid Al Fitr, I feel lonely here in Canada. Yes, there are Moslems here, but the celebration just hits differently. Or maybe am just too old for celebrations 🙉🙊🙈 But you know, like when it's Christmas, it's a day off, however for Eid Al Fitr, it is not. So it feels like any other day. People still go to work, to school, instead staying home with their family and friends, feasting like there's no tomorrow 😁

Needless to say, altho Eid Al Fitr was on the 10th, we have yet to celebrate it. My household will celebrate it tomorrow, on weekends, where all of us can be at home together 😍😁😍😁
For today's recipe, it is Indonesian dish of oxtail soup. We call it Sop Buntut.

700 g oxtail
1 celery
Baby potatoes
Baby carrots
6 cherry tomatoes
Enough water
10 cloves
1 cinnamon stick
1 nutmeg
1 onion
5 green onions
1 thumb ginger
4 garlic
Bouillon powder (mushrooms powder, chicken, beef, whichever. If not salt, sugar, MSG)

Boil oxtails in enough water. Rinse and place into instantpot

Add in celery, half a bag of potatoes, half a bag of carrots, and tomatoes. Pour enough water to cover everything, or as much broth you'd like to have.

Add in spices, ginger, green onion, halved onion, and diced garlic. You can either crush, grated or leave the nutmeg whole.

Season with bouillon powder

Choose soup option on the InstantPot.
