HOMEMADE VEGAN UDON (recipe)

Udon is a famous dish in Japanese food, but now it's popular all over the world.

Some days ago we visited a cafe in my city, and there we ordered vegan udon.
It cost about 5$, and it was just great, we all tasted it, and we all liked it.
So we decided to make the same dish at home.

We bought udon and many different vegetables.

So we need:

2 eggplants
3 bell peppers
2 onions
3 tomatoes
2 tbsp soy sauce
1 tbsp grape vinegar
1 tbsp melted butter
salt, pepper

At first we must cut and soak egglants in water with salt for some minutes. Such a trick will remover all bitterness from eggplants fast.

you see water has become dark? Bitterness is removed

Then we cut all vegetables and stew them all together about 15-20 min.

Add some vinegar when it's already cooked. There is no need to stew it there too.
Some salt + pepper.

Then we cook udon itself.
Just some hot water with salt and cooking about 10 min.
Some soy sauce is highly recommended here as well.

Melted butter is fine addition to it!
It cook much better with it!
Moreover, melted butter is very useful!

And some greenery for beauty of colours and more use.
I took arugula

We liked my homemade vegan udon, it was really not worse than in the cafe;)
