Huevos rancheros is the best breakfast option on a Sunday. Salsa is poured over warm, runny fried eggs and refried beans that are gently cooked tortillas, creating a truly delicious Mexican breakfast dish. It always strikes the right note.
I'm going to show you how my mom cooked huevos rancheros today. It's the epitome of hearty, spicy comfort food and is guaranteed to become a regular on your breakfast table as well.
Let's make the tortilla!
Mix till the dough pulls away from the sides of the bowl. Knead the dough for a couple of minutes and form into a ball.
Let us cook the tortillas.
By the way, I only am cooking two tortillas, so I froze the other tortilla balls.
Flatten the tortilla ball either using a tortilla press, or a pan, or a rolling pin. I am using two plastic bag and a rolling pin. I rolled the tortilla to about 7 to 8 inches wide.
Heat up a cast iron pan or any pan for that matter, and when it is hot, put the tortilla in the pan. Cook on one side a few minutes, and the other side for a another minute or so.
And now, the Huevos Rancheros!
Prepare the beans, salsa, avocado, jalapeno (you may add cheese and Mexican crema, pica de gallo).
Fry the eggs.
Assemble the Huevos Ranchers.
Lay the trotilla, beans. eggs, and avocados.
Add the toppings desired like salsa, jalapenos, shredded cheese, and cream.
Let's eat!
