Milkfish or in Latin it is also called (chanos-chanos) is a freshwater fish that is very often consumed by our society, milkfish can be processed into various kinds of very delicious dishes, one of which is presto milkfish which is usually served in restaurants, sweet and sour milkfish, Balinese spiced milkfish and many more delicious milkfish dishes,

Well for this afternoon I will process this milkfish according to my regional specialty, namely Acehnese stir-fried milkfish hehhee ..
Let me show you a very simple recipe for cooking it, the ingredients are also very easy to get,

First, I clean the milkfish, wash it clean and cut it into pieces according to taste.

The ingredients

IMG_20241023_214451.jpg

  • 12 pieces of sunti tamarind
  • Half a teaspoon of coriander
  • Half a teaspoon of cumin
  • 5 cloves of shallots
  • 2 cloves of garlic
  • 2 cloves of candlenuts
  • A little turmeric
  • 8 pieces of cayenne pepper
  • Curry leaves

Puree all the spices except the curry leaves, you can use a blender or you can also pound them until smooth, I happen to use a blender by adding a little water

Then slice 2 cloves of shallots, sauté the shallots until they wilt, don't forget to add the curry leaves too, sauté until you can smell the fragrant aroma.

Then put the milkfish and the spices into the pan, then add a little water and cook until done and don't forget to add a little salt.

Cook until boiling and the water reduces until perfectly cooked, no need to turn it over because it will damage the fish.

Acehnese spiced milkfish is ready to be served
Here I do not add coconut milk, because I replace coconut milk with candlenuts, for those of you who want to add a little coconut milk, I can, and it tastes even more delicious eaten with warm rice, with a combination of sweet fish and slightly spicy sauce adding a delicious taste to the fish.

I very often cook this dish at my house, as my daily food at home, because my family at home really likes to eat milkfish, especially my mother, she really likes to eat milkfish head which tastes very sweet, but for my child, I don't dare to give it because it has a lot of bones, indeed this milkfish cannot be eaten by children, only adults can enjoy it..
Okay, next time I will process this fish again with another recipe typical of my area. Thank you for those who have read and seen my daily cooking posts, there is indeed nothing special about this recipe, but I guarantee that once you try this recipe you will be addicted to wanting to cook it again hehhee...
