How To Prepare very healthy Spine Gourd (Thumba Karavila) Curry

Hello my dear Hive friends,
I am going to show you today how to prepare Spine Gourd Curry. This is one of the special vegetables in ayurvedic food. Many Sri Lankans like this vegetable because its very healthy, but this is very expensive vegetable in Sri Lanka. There is a season for the spine gourd.
Ok friends, let's see how to prepare this very valuable dish.

Ingredients
250 gr Spine Gourd
1/4 small B.Onion chopped
2 green chillies chopped
12 nos curry leaves
2 pieces pandon leaves
1/2 tea spoon curry powder
1/2 tea spoon salt
Dash of tumaric
150 ml Thin coconut milk
100 ml Thick coconut milk

Method
Remove the stems of spine gourd and wash it well.Now cut in to wedges and put in a pan as shown in the picture.

Add B.Onion, green chillies curry leaves and pandon leaves

Now add curry powder, tumaric and salt.

Add thin coconut milk and mix it well and keep it on the fire.

When the gravy is reduced add thick coconut milk.

Keep the Spine Gourd Curry on low fire till the curry reduces .

Now pour little bit oil in to a pan and keep it on the fire.When the oil is heating add some of curry leaves. Then add spine gourd curry to the pan and mix them well.
