β€’ Ingredients
*Rice
Rice: Β½ kg
Salt to taste
Green chillies: 2
Whole garam masala: 1 tbsp

*Yogurt Mixture
Yogurt: Β½ cup
Coriander leaves: ΒΌ bunch
Mint leaves: ΒΌ bunch
Lemon Slice: 2
Salt to taste

*Vegetable mix
Peas: 1 cup
Potato: 2
Tomato: 2
Carrot: 4
Cabbage: 1 cup
Green chilli paste: 10-12
Coriander leaves: ΒΌ bunch
Onion: 2
Spring Onion: 1 cup
Capsicum: 2
Salt to taste
Curry leaves: 15
Oil: Β½ cup

*Raita
Yogurt: 1 cup
Salt: 2 pinch
Green chilli paste: 1 tsp
Black pepper: 1/8 tsp

*Garnishing
Green chilli: 4 - 6
Green food colour: 1/2 tsp

β€’ Method
Take the rice Ingredients and mix them together. Boil and keep it aside. Take the yogurt and add all of its ingredients to it. Mix and set it aside. Mix the raita ingredients together and mix. Take a pan and heat oil in it. Take the white part of a spring onion and fry. Add peas and potatoes. Add water and cover and cook. After that, add carrots and green chilli paste along with salt. Mix and add capsicum. Cover and cook for 2 minutes. Add tomatoes, cabbage and the green part of a spring onion. Add curry leaves and coriander leaves. Mix and cover and cook for 2 minutes. Turn the flame off. Take a larger pot and layer the vegetables. Layer the rice on top of that and add the yogurt mixture over it. Layer the rest of the vegetables on top and layer the rice again. Add green food coloring and green chillies. Place a disc-shaped pan underneath and cover and cook for 10 - 15 minutes on low flame. Your Green Spicy Vegetable Rice will be ready!!!πŸ˜‹πŸ›
