Since I saw this contest I knew I wanted to participate😍. This color 💚 is very special to me, because it is the most abundant in nature🐢 and it is also the favorite color of my mother 👩👧, whom I miss a lot, because we are far away. So I set out to make a dessert for her (which I will have to repeat when we are together, of course😅).
This task was not going to be easy for several reasons: my mom doesn't like sweets too sweet 🤦♀, natural green is a color rarely used in baking (I think 🤓) and I wanted it to be as healthy as possible 💪. Days ago I'm seeing in networks the use of avocado 🥑 to make desserts so I thought it would be a magnificent source of green color, but I didn't want it to taste like guacamole. To make a long story short, I looked for a recipe for avocado tart with lime 🍋 and here I bring it to you. Enjoy
- Mashed avocado, 1 cup
- Condensed milk, 1 cup
- Lemon juice, 2 tablespoons
- Flour, ¾ cup + 3 tablespoons
- Sugar, ½ tablespoon
- Butter, 40g
- Vanilla ½ teaspoon
- Gelatin, 1 tablespoon
- Music that makes you happy, to taste
Tips: You can substitute the condensed milk with yogurt or your choice of milk (but you would have to add sugar to the filling, 1 cup I think would be fine). The music I suggest brings the joy that inspires this recipe in me, but you can put your happy song to the pie.
This week I've been grappling with how to make a shortcrust pastry, I told you about that in my previous recipe, so for this recipe I decided I was going to do things a little differently. I put the ¾ cup of flour in a bowl with the butter and sugar and kneaded until I had a sandy consistency mixture. Then I put in the vanilla and water and kneaded for two minutes in the bowl until I had a uniform, elastic dough.
Then I put the dough on the table with the 3 tablespoons of flour and extended it with an empty bottle (for lack of a roller) until it was thin. At this point I placed it in the previously floured mold and removed the excess dough. Then I put the mold in the oven for 15 minutes at 180°, but considering that it burned a little bit at the edges 😌, maybe 12 minutes would be enough.
For the filling I mashed 4 avocados and the lime juice, until I got a cup. These avocados I used turned out to be completely green inside, which was better to get the color I wanted, but they had very soft and thin skin, so peeling them was complicated 😕. Nevertheless their flavor is very smooth, so I recommend them. Then I put the cup of condensed milk and mixed it all together.
At this point I realized that the puree had not been smooth 🤦♀, and as I did not want lumps I passed it through the strainer (you can beat everything in the mixer from the beginning). I added the gelatin dissolved in hot water, which will help give consistency to this dessert. I added the filling to the baked dough, decorated with lemon zest and let it rest in the refrigerator for 10 hours.
This dessert is perfect on its own, but I liked the color contrast provided by the grapes and the mix of flavors. It is incredible how creamy the avocado is and how the lemon stands out.
I recommend this pie to give joy to special people, like our mothers💚.
I hope you liked it. See you in another post.
