Sunday Breakfast in a Flash

One thing's for sure, I'm no early bird, more of a night owl! It takes a good couple of hours before my brain gets into gear.

Remember those old wind-up toys? Well, I need that kind of kick-start, but once I'm on the go, there's no stopping me, and that usually happens after dinner.

They say breakfast is the most important meal of the day, which makes sense, you need fuel to get going, right? But, I'm not a breakfast person either; a slice of toast with peanut butter was my breakfast on the go!

After the abdominal surgery, I had to be careful with what I ate. The one thing you need to avoid at all costs is the awful...constipation! I initially did not touch bread, but slowly introduced it into my diet, with no adverse effects.

I started with a bowl of oats porridge with cinnamon and honey, but now my breakfast mostly is bran flakes with almond milk, fruit, and berries.

When Avocados are in season, hubby's favourite used to be Avo on Sourdough toast, something I also enjoy.
This gorgeous avo did not have any blemishes on it.

I served it with Nasturtium leaves and a flower, all edible. It has a kind of mustardy taste, with the same bite.

Sunday Breakfast in a Flash

My youngest son spent a couple of days here for work and needed a little more than just cereal. We both enjoyed one of my favourite breakfasts in a jiffy - poached eggs in a tomato and onion sauce, absolutely delicious!
All my herbs are looking a little sad after a very dry winter, but they're coming to life again. Somehow the yellow Nasturtiums are flowering more than the orange ones.

I won't be giving an exact recipe as such, you may want to change your sauce by adding mushrooms, bell peppers, eggplant, or whatever you have in the refrigerator, or even better, the garden;) Tomatoes and onions, or spring onions, are a must, in my opinion.

The Ingredients

Sautee diced onions and spring onions in a little oil and butter.

Add diced tomatoes, and Italian herbs, and season to taste. Cover and cook a little.

Make wells in the sauce, carefully break the eggs in the wells, and put the lid on to poach the eggs.

We both like our eggs medium, hubby used to like a runny egg, so it often was quite a juggling act to get his out before it hardens.
I only had one egg, and almost forgot to take the last photo, our eggs were a little overdone, but still delicious!
