here is a simple recipe for potato and tomato curry:
Ingredients:
- 2-4 potatoes, boiled, peeled, and cubed
- 2-3 ripe tomatoes, finely chopped
- 1-inch piece of ginger, grated
- 1 green chili, finely chopped (adjust to your spice preference)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- Salt to taste
- 2 tablespoons cooking oil
- Fresh coriander leaves for garnish (optional)
Instructions:
- Boil and peel the potatoes, then chop them into cubes.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add grated ginger and green chili. Sauté until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and the oil starts to separate. This will take about 7-8 minutes.
- Add the dry spices: turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few more minutes until the spices are well incorporated.
- Add the chopped potatoes and mix them with the tomato mixture.

Add about 1/2 to 3/4 cup of water. Cover the pan with a lid and let it simmer on low heat. Stir occasionally and cook until the potatoes are heated through
.If you prefer, garnish with fresh coriander leaves.
- Serve the potato and tomato curry hot with roti, naan, parathas, or rice.
