Tomato and Tomato curry 🍛 🍅 🥔

here is a simple recipe for potato and tomato curry:

Ingredients:

  • 2-4 potatoes, boiled, peeled, and cubed
  • 2-3 ripe tomatoes, finely chopped
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped (adjust to your spice preference)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh coriander leaves for garnish (optional)

Instructions:

  1. Boil and peel the potatoes, then chop them into cubes.
  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

  1. Add grated ginger and green chili. Sauté until the raw smell disappears.

  1. Add the chopped tomatoes and cook until they become soft and the oil starts to separate. This will take about 7-8 minutes.
  1. Add the dry spices: turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few more minutes until the spices are well incorporated.

  1. Add the chopped potatoes and mix them with the tomato mixture.

  1. Add about 1/2 to 3/4 cup of water. Cover the pan with a lid and let it simmer on low heat. Stir occasionally and cook until the potatoes are heated through

  2. If you prefer, garnish with fresh coriander leaves.

  1. Serve the potato and tomato curry hot with roti, naan, parathas, or rice.
