Crispy bites - sweet and salty biscuits

Every time there is an occasion to brighten up a moment with delicious food, I am inspired to make something that will satisfy both the salty and sweet cravings. It was my birthday recently and since it was a working day, I decided to make something for my colleagues. I thought about whether it should be sweet or salty, and then I came up with the idea of making both. And I have to admit that it was the best idea because the pleasure was double. I made butter biscuits, crispy, soft bites that melt in your mouth and are hard to resist.

First I made sweet biscuits.

Preparation is very simple and consists of the following steps.

Place 13 tablespoons of wheat flour in a bowl.

Add 5g of baking powder, a pinch of salt, 20g of vanilla sugar, 3 tablespoons of sugar...

And a little cinnamon or cocoa, if you like.

Now it's time for my favorite ingredient - almonds.

IMG_20230130_211434.jpg

Grind 100 grams of raw unsalted almonds.

IMG_20230130_215700.jpg

Add them to the bowl with the other ingredients.

IMG_20230130_221324.jpg

Add 150g of butter to the dry ingredients that you previously mixed with a spoon.

And now use your hand for anti-stress therapy - kneading. 😊

IMG_20230130_222221.jpg

Knead by hand until a crumbly mixture forms.

IMG_20230130_222738.jpg

Add one egg and 50g of honey.

IMG_20230210_001421.jpg

And now knead the dough so that it is soft, smooth and does not stick. Add flour as needed but not too much. The dough should look like this.

IMG_20230210_001458.jpg

Wrap it in foil and put it in the fridge for half an hour.

IMG_20230130_223957.jpg

After half an hour, take the dough out of the fridge and prepare the rolling pin and cookie cutters.

IMG_20230130_233953.jpg

Roll out the dough and cut out pieces with cookie cutters.

IMG_20230210_001806.jpg

Place them on baking paper and bake for 15 minutes at 180 degrees.

When you take them out, let them cool down a bit. And then you can eat them with or without filling.

Let's make the salty ones now.

You need 13 spoons of flour.

IMG_20230130_224958.jpg

250g of grated edam cheese.

IMG_20230130_225935.jpg

Mix the edam cheese with the flour.

IMG_20230210_005158.jpg

Add 250g of butter and half a beaten egg (you will need the other half for coating). Knead the dough.

Wrap it in foil and leave it in the fridge for 20-30 minutes.

When you take the dough out of the fridge, roll it out and also cut out shapes with cookie cutters.

IMG_20230131_010328.jpg

Coat them with the second half of the beaten egg and sprinkle with seeds and spices of your choice. I chose flax, cumin, oregano and sesame. Bake them also for 15 minutes.

And then enjoy their taste.

When I finished the cookies, it was very late, but before going to bed, I ate a sweet one with Nutella. 😊

I went to work early in the morning and packed biscuits, homemade strawberry jam and Nutella. I felt like Little Red Riding Hood. 😊

When I got to work, I put the biscuits on the table and took a photo of them just before they were eaten. And they were eaten very quickly. 😊

My colleagues were delighted, and I was glad that the effort paid off.

These crispy bites are really special, with a delicate milky taste. They are simple but simply beautiful.

Thank you very much for reading.

The images and writing are original and mine.

Greetings!
