Ingredients

  • 2-3 garlic cloves
  • 3-4 red chilies
  • 1tsp turmeric powder
  • 2tsp fish sauce
  • 1tsp dark brown sugar
  • 2tsp chopped lemongrass
  • 2tbsp coconut milk
  • 600g white flesh fish fillets
  • 2bunches coriander or mint leaves
  • 10-15 Green beans( cut into one-inch pieces )
  • 2-3 eggs (optional)
  • 2tsp galangal (chopped)
  • 1tsp salt
  • 1tsp lemon or tamarind juice
  • 2-3 shallots (onion)
  • 3-5 banana leaves
  • 2tsp red mullet fillet(optional)
  • 2cups flavored oil

Preparation method

  • Heat the oil in a pan
  • Cook the garlic and shallots for 5-7, until the shallots become soft.
  • Add the lemongrass, chili, galangal, and turmeric in it and cook for 5-7 minutes then salt, fish sauce, and dark brown sugar Stir until the sugar has melted into the other ingredients.
  • Add the coconut milk, bring to the boil and add lemon juice and red mullet for taste
  • Add fish pieces banana leaves and green beans and cook for 5-10 minutes
