Tasty Wednesday #16: Baked Muffins with Protein (Recipe)

A while ago I shared a recipe for an alternative to the American Pancakes but with protein and a lot healthier than most of the recipes you'll find on the internet for this kind of dessert.

From my passion for going to the gym quite a lot in the past 1-2 years, and from the desire of trying to improve my lifestyle as much as possible, I ended up making a bit more experiments in the kitchen with this purpose, also reproducing the common muffins in a healthier form.

Obviously, if you are not a fan of having protein in your desserts, there are some other options too which involve more fruits and oats than flour and chocolate, but for my daily routine they served just right, so here is the recipe for Baked Muffins with Protein.

  • High Protein Cocoa Pudding 200g
  • 1 egg
  • 3 spoons of flour
  • 50g cocoa
  • 10g baking powder
  • rum essence
  • chocolate flakes

Like in the previous recipe with American Pancakes with Protein as they have quite a lot of ingredients in common, you can either add all the ingredients in a bowl from the start and mix or add them two by two mixing in between to make sure everything is incorporated well at the end of the process. This time I decided to have it all together from the start.

As soon as you have the composition mixed well, make sure to grease with oil the baking forms either if they are from paper like mine or a specific silicone form for muffins.

This step is very important as due to having pudding in the composition rather than the common ingredient, the overall composition is a bit stickier than in general and nobody enjoys when the muffins break and lose a part of it in the baking forms. But this only applies on the paper forms for muffins.

The muffins only needed to stay for about 20 mins at 200°C in the oven until they could be taken out.
You can add chocolate flakes both in the composition and on top of it. I only added on top of it as I tried to have the final result as low in kcals as possible. The same applies to fruits if you opt for this method instead of chocolate.

Sadly, the muffins didn't grow as much as they usually do but that must be because of adding too much composition in the forms than recommended, but at least they got the crunchy layer on top of it and very soft on the inside as I was looking for.
