RICE WITH VEGETABLES AND EGGPLANT DICE (a quick and healthy recipe)

Happy Sunday to everyone from @foodiesbeehive I haven't posted in this community for a long time, let's say that my forte is illustration and it's what I post the most here in #hive but today I bring you a post with a recipe a little similar to one that I already I had shown before but in this case varying in some things, where I will also give some tips and if you follow everything to the letter you will get a good meal, fast and healthy and very, very delicious

The main recipe is the eggplant recipe, my mom created it or at least that's what we believe since I haven't seen it around, in short they are small cubes of fried eggplant, but it's not frying and that's it, it's a recipe that Depending on your taste, you can vary it, in this case I will show you one accompanied with rice and, as I had said, I will give you some tips so that you can make them as faithfully as possible and you can feel the same flavor as the one we make in this case, first the ingredients

  • eggplant
  • carrots
  • corn (even the filaments later I will indicate why)
    corn flour or as a second option wheat flour
  • oil
  • potatoes
  • soy sauce
  • lemon
  • salt
  • sugar
  • spices (in this case we use oregano)
  • rice

If you want everything to be perfect and the same as what we prepare here, this is what we use when making it with rice, but you can vary this with other things, this is a very versatile recipe, it can be prepared with pasta, with snacks or to fill bread even

PREPARATION

We are going to focus mainly on how to make the eggplant cubes but I will still show a little of the rest of the preparation with the rice

First you must make cubes of eggplant, put them in a container or something deep since there you must add the sugar, spices, salt, lemon and soy sauce, stir so that all the cubes are well coated with the sauce.

You should let them marinate for at least an hour, but you surely know that the more things are marinated, the more flavor they acquire, so what we do is chop it in the morning and put it to marinate and at noon it is taken out and prepared, so that's it. my proposal if you want to do it as we do it

Then, after the hour or several hours that you have decided to leave it marinating, it is time to continue with the preparation, you take out the cubes and add a little more lemon before proceeding to bread them with corn flour or wheat flour.

Now is the time to bread them and then fry them. I recommend toasting them well as they will be crispy on the outside and soft on the inside and the longer you let them marinate they will be softer.

Now one of the tips with corn flour will be harder on the outside, I like them more, with wheat flour not so much but they still acquire a very good flavor, but in my opinion if you can make them with corn flour much better

So far the part of the eggplant recipe, here you can say what to eat it with, with rice, fill bread, pasta or as a snack and if you want to feel more flavor than it has, squeeze a lemon and you will like it much more, now, The following are some extra steps so that the rice turns out well for you.

Chop the potatoes and carrots into cubes, you can add garlic, onion or even, as sometimes we make a hot pepper, this gives it a good flavor. As for the corn filaments, don't throw them away, they have vitamins and they really don't. They take away or add flavor but they make what you eat more nutritious.

There are times when we sauté or fry everything and put it together, maybe they will say that it is too much fried but the idea is not to exaggerate, in this case the only thing fried would be the eggplant, the rest we cook with almost no oil

and well friends, after having everything, it is time to combine the rice (I did not include the rice process since it is something basic) the vegetables and the cubes, a little soy sauce while you stir everything and that's it, a good recipe, with lots of flavor, no meat and healthy since it has little oil
