Sweet potato balls!

My wife recently learned how to make sweet potato balls because my daughter’s boyfriend liked the so much in Taiwan. So on our trip to visit them in the US, she wanted to make them for him.

So the first step is to make the dough. Simply put its sweet potato mostly. To start she boiled a good sized sweet potato and smashed it. Then she added potato starch. Then salt and sugar to flavor. No real recipe. Just taste and texture.

Now, she rolled and cut into balls. For ours, we did a size similar to the tip of ones thumb. Then role. This is the same size we use for gnocchi.

Now for the dangerous part. I really dislike deep frying in other peoples kitchen. Usually we use a wok, but I’m using a small pot. So it’s a risky job.

Voila! They puff up. They go from the dense chunks in the picture above into puffy balls as in the lead picture. Season as you wish. We used more salt and white pepper.
