Introducing "Adobong Adidas" - A Delicacy that I Learned from my Sisters

Greetings!

Here's a dish that I really like to eat on its own, but also perfect when partnered with rice, it is called "Adobong Adidas". Here in our province we always refer to chicken feet as "Adidas". Adidas is now a common term in our province hence you can see sellers of chicken feet tagging it "Adidas".

I was first introduced to this dish when I was a teenager, my two elder sisters were the ones who introduced it to me. Back then my two sisters would only cook it for less time. But as time passes by we discovered that cooking it until the flesh/meat falls apart is the most ideal of cooking Adobong Adidas.

This dish is also very versatile, you can cook it with or without bay leaf, you can cook it with or without adding sugar, and you can also grill it afterward (which I also love very much, I can eat about ten pieces of it when grilled).

By the way, if ever you are going to grill it afterward I recommend that you add sugar so that it has a sweet kick like a pork barbecue.

And if you love beer, grilling it is a perfect partner for beer on any occasion (this is according to someone I know because I do not drink beer).

COOKING TIME: Until the flesh/meat is falling apart from the bones (about less than an hour after the first boil).

So, without further ado, here's a cook this delicious delicacy.

  • Chicken Feet
  • Onion
  • Garlic
  • Ginger
  • Soy Sauce
  • Vinegar
  • Cooking oil (for sauteeing)
  • Salt (to taste)

Clean the chicken feet, remove the skin, and cut the nails

Peel and slice the garlic

1. Sautee the onion, garlic, and ginger in cooking oil

2. Add the chicken feet

3. Stir it so that all the chicken will be evenly sauteed

4. Add some water, enough to submerge all the chicken (you can definitely use less water if you want, the less water the tastier the dish), add a pinch of salt (be careful in adding too much salt because the soy sauce is already salty)

5. Add the soy sauce

8. Remove the suds at a first boil, taste it, then let it boil, when the flesh/meat of the chicken feet are falling apart from the bones it is done...
