La ketembilla es un fruto que conocí por mucha casualidad y es que desde que comencé a estudiar pastelería, todo ha sido un antes y un después en temas de ingredientes.

La ketembeilla la conocí por una amiga de toda la vida, me la encontré y me dijo que si quería arándanos. Yo soy muy fan de los arándanos y es un fruto que se da en las partes frías y altas del país y suele ser costoso y escaso. El tema es que ella me dice que su vecino tiene un árbol y que es muchísimo la cantidad de fruto que se le va a dañar. Esto me hizo pensar en que no se podría tratar del mismo arándano que yo conozco. Cuando me mi amiga me entrega como 3 kg de "arándanos", yo automáticamente comencé a investigar el fruto y aproveché el Google Lens para investigar y fue ahí que conocí que se trabaja de ketembilla o también llamado arándano criollo.

Ketembilla
La ketembilla es una baya similar al arándano, tiene un sabor parecido, pero lo diferencia una carga de ácido muy fuerte. Al igual que el arándano, al procesar da un tono de rosa muy bonito. Yo aproveche para hacer mermelada y guardar para utilizar en diferentes preparaciones donde necesitaba color y sabor acido, como lo fue en un postre que prepare llamado chocomenta al estilo Ladyfont, donde una de las capas tenía ketembilla.

Muy diferente al arándano que, si se puede comer tranquilamente, aun en esos paladares que son sensibles al sabor acido. Una de las cosas que me encanta de la Ketembilla es que se da tranquilamente en ambientes tropicales, es un arbusto no tan grande y se vuelve esa opción ideal para cuando no tienes acceso a los arándanos.

Quise hablar de esta fruta porque siento que puede tener un excelente potencial dentro de la pastelería o repostería, bien sea para potencia sabores ácidos de otras frutas como el de las fresas o bien para potenciar o dar color rosado, en diferentes tonos, y no tener que utilizar colores artificiales.
