STUFFED BANANA
Ingredients
4 elaichi bananas
1 cup fresh scraped coconut
½ cup grated jaggery
Salt to taste
1 tablespoon raisins + for garnishing
6-8 cashewnuts + for garnishing
½ teaspoon green cardamom powder
1 teaspoon butter
Castor sugar as required
Honey for drizzling
Method
- Dry-roast coconut in a non-stick pan till golden. Add jaggery, mix and cook for 2-3 minutes.
- Add salt, raisins, broken cashewnuts and cardamom powder and mix well. Transfer in a bowl.
- Peel the bananas. Slit each banana without cutting through to make a cavity. Stuff them with some prepared coconut-jaggery mixture.
- Heat butter in a non-stick pan. Add some castor sugar and swirl the pan. Place the stuffed bananas and cook till it caramelizes from all sides.
- Drizzle some honey on top and serve immediately garnished with raisins and broken cashewnuts.
