STUFFED BANANA

Ingredients

4 elaichi bananas
1 cup fresh scraped coconut
½ cup grated jaggery
Salt to taste
1 tablespoon raisins + for garnishing
6-8 cashewnuts + for garnishing
½ teaspoon green cardamom powder
1 teaspoon butter
Castor sugar as required
Honey for drizzling

Method

  1. Dry-roast coconut in a non-stick pan till golden. Add jaggery, mix and cook for 2-3 minutes.
  2. Add salt, raisins, broken cashewnuts and cardamom powder and mix well. Transfer in a bowl.
  3. Peel the bananas. Slit each banana without cutting through to make a cavity. Stuff them with some prepared coconut-jaggery mixture.
  4. Heat butter in a non-stick pan. Add some castor sugar and swirl the pan. Place the stuffed bananas and cook till it caramelizes from all sides.
  5. Drizzle some honey on top and serve immediately garnished with raisins and broken cashewnuts.
