Today I made a sweet peas stew that I served on a bed of white rice, it was delicious and 100% vegan. You should try it.
Start with chopped onion, garlic, ginger, carrots. Sauté with olive oil, add tomato paste and water, cook until soft.
Open a can of sweet peas, rinse the peas, add to the pot, cook another 10 minutes. Add spices according to your liking. I use turmeric in many dishes, also curry powder, Goya adobo, salt, cayenne pepper.
Now chop some parsley or cilantro, whatever you prefer, they both add a fresh touch to the dish. I used cilantro this time. Add to the pot, and turn the heat off. I made some plain white rice, and I will spoon my peas on top of it. You can also eat this stew with bread, pita chips, wheat tortillas or roti. Enjoy!
