ingredients:
-600 g cream cheese
-1 cup sugar
-1 package biscuits (digestive without sugar)
-6 tablespoons butter (margarine-melted)
-lemon juice
-lemon zest (optional)
for lemon sauce
-lemon juice (about 6 lemons)
-1 cup sugar
-1 tablespoon butter (margarine)
-1 tablespoon cornflour
method:
-pulse biscuits in a food processor, until finely chopped
-add melted butter and stir
-transfer the mixture into glasses
-cool in the fridge
-combine cream cheese with sugar and lemon juice and stir, until smooth
-add the cream into the glasses and chill
-for the lemon sauce combine lemon juice, sugar and cornflour in a saucepan over low heat
-cook, until mixture thickens
-add butter and stir well
-let cool
-pour sauce over cheesecake and chill in the fridge
-serve cheesecake with slices of lemon and biscuits or with whipped cream
