  • 1 turkey of 3 1/2 kilograms
  • 1 onion cut in half
  • 375 Ml of broth
  • 150 Ml of water
  • 150 Ml dry white wine
  • 2 tablespoons of curry powder
  • 375 Ml of mayonnaise
  • 2 tablespoons of lightly whipped cream

For butter to tarragon

  • 75 grams of butter softened at room temperature
  • Juice of 1/2 lemon
  • 1 spoonful of fresh tarragon, finely chopped
  • salt and pepper

  1. Mix in a bowl the butter with the lemon juice, the estragon, salt and pepper to taste.

  2. We clean the turkey very well, fill it with half the tarragon butter and half of the onion. We spread it with the rest of the butter, place it on a refractory source and pour over the broth, water, wine and onion remaining.

  3. We roast the turkey in the preheated oven, at medium-high temperature for about 2 to 3 hours, spraying it from time to time with your cooking background.

  4. Let it cool completely before carving it, and wrap it in a plastic sheet transparent or in aluminum foil, so that it remains juicy.

  5. We add the curry powder to the mayonnaise and mix well. If you wish, we can add the cream and we pour the dressing in a plastic container, fitted with a hermetic seal.


We can accompany this recipe with rice and a salad of watercress, with chopped nuts that we would serve apart.
