Irish Potato Cakes - Boxty


They say everyone is Irish on St. Patrick's Day. Fair enough. Here's an Irish recipe!

I've never been to Ireland, but a Facebook friend of mine from Ireland told me Irish Potato Cakes are very popular in Northern Ireland. She said I made it very well. I could have remade it and flipped it over better, but I left it as is because that's an expected outcome.

This is part of the traditional Irish breakfast fry which includes eggs, bacon, sausage, and fried mushrooms.

RECIPE FOR THE MASHED POTATOES

INGREDIENTS

1 cup of mashed potatoes

1 cup of raw, grated potatoes

1 cup of flour

2 teaspoons of baking powder

2 teaspoons of sea salt

1/4 cup of milk

Butter (or oil) for frying

INSTRUCTIONS

In a small mixing bowl, mix together the flour, baking powder, and salt.
In a large mixing bowl, add mashed potatoes, and grate raw potatoes.
Add eggs to the large mixing bowl and whisk.
Add milk to the large bowl and the flour mix and whisk heavily.
Slowly add batter to a deep dish pan and fry for 4-5 minutes on each side.
Cut into 4 pieces.
