Whole Mind Cooking: Create a Delicious Veggie Quinoa Salad


Looking for a quick, delicious and easy way to get your greens in? Try our yummy quinoa salad!

Time: 20 minutes

Servings: 8

Cost: $9.25

Ingredients:

2 cups of quinoa
1 cup green peas
1 cup of snap peas
1/4 cup chopped mint
three tablespoons of olive oil
1/2 lemon
salt
pepper

Steps:

  1. Cook quinoa according to brand instructions (we use sprouted quinoa)

  2. While the quinoa is cooking, boil green peas and snap peas for 15 seconds, drain and place in a bowl

  3. In a large bowl, mix the cooked quinoa, chopped mint, salt and pepper to taste, olive oil, juice of half a lemon and the cooked peas

Optional: serve with fresh chopped chilis for an extra kick!
