Whole Mind Cooking: Healthy Vegan Bolognese Pasta


Not only is this Italian bolognese delicious, inexpensive and filling, it is loaded with vegetables to help you get your five-a-day!

Servings: 8

Cost: $29.74 -- all organic ingredients

Ingredients:

1 diced onion
2 mixed garlic cloves
salt
pepper
1/2 tablespoon Italian spice
olive oil
1 diced zucchini
1 cup diced carrots
1 1/4 cups diced cauliflower
28 oz can diced tomatoes
2 heaped tablespoons tomato paste
1/2 tablespoon Italian herbs
1/2 tablespoon Italian spice
red wine
pasta of your choice
basil (optional)
parmesan (optional)

Steps:

  1. Over medium heat sauté diced onion with mixed garlic cloves, salt and pepper to taste and Italian spice. Mix in olive oil until onions are translucent.

  2. Add diced zucchini, chopped carrots and diced cauliflower, and cook for 5 minutes

  3. Add crushed tomatoes, a splash of water, tomato paste, Italian herbs and a splash of red wine

  4. Over low heat cook for 45 minutes

  5. While sauce is cooking, boil pasta of choice (we use red lentil, chickpea pasta or quinoa pasta)

  6. Serve with fresh basil and parmesan cheese (optional)
