Qapchi - Ayacuchan dish

Hello lovely readers today I am sharing with you a recipe from an specific region of Peru, Qapchi , this dish is from the south of Peru from the region of Ayacucho , Peru has many dishes from many regions , since here we share about Peruvian food it is fair to share recipes not only from the capital of Peru (Lima) also other regions , this dish is a delicious creamy sauce , with simple ingredients , most of them easy to get, so you don't have excuses to not make it at home.

Some tools/Ingredients I used , will be at the bottom of the post

Qapchi | Servings: 4

Ingredients :

  • 300 gr of "Queso Serrano" or Goat Cheese
  • 1/4 Cup of Evaporated milk
  • 1/4 Cup of "Huacatay leaves" or 1 tbsp of Huacatay paste
  • 1/2 Cup of Spring onion leaves
  • 1 teaspoon of "rocoto paste" or a quarter of fresh rocoto
  • 2 tablespoon of vegetable oil
  • Salt and pepper to taste

Steps :

  • In a bowl add the cheese then crumble it , after that add milk, huacatay and rocoto paste, integrate

  • Once its integrated add oil, spring onion, 1/2 teaspoon of salt and teaspoon of pepper give a good stir and its good to go, add more salt if needed usually goat cheese has a good amount of salt , it is not necessary to add more.

That is it guys, this sauce its really delicious, you can serve it along boiled eggs and cooked potatoes , or with some fried pork or chicken , give it a try you won't regret it
