Baking with Tyger -Simple Raspberry Cake (Vegan)

You will need:

9 table spoons of
aquafaba (eggreplacer)

1 cup of corn meal (120 grams)

2 cups of flour (270 grams)

16 tablespoons of plant based butter

1 cup brown cane sugar (200 grams)

1 teaspoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon of salt

1 cup of cashew milk (or other plant based milk) (237 ml )

1 1/2 cups of fresh raspberries (180 grams)


Now We bake

1-Preheat oven to 325 Fahrenheit ( or 160 celcius)

2-coat the sides of a 9 inch (22 Cm) baking pan with butter or baking spray then line the bottom with waxpaper and coat it with butter as well.

3- whip the aquafaba until it is foamy but not stiff

4- Whisk 2 cups flour, cornmeal, the baking powder and salt in a bowl until combined

5- Beat butter, vanilla and sugar until light and fluff (with a mixer about 3 min)

6- Now slowly combine the flour mixture, alternating with the milk, into the butter mixture until just smooth.

7- then fold in raspberries with 2 tablespoons of flower

8- lastly fold in the aquafaba

9-Bake until the cake is lightly golden on top and a toothpick inserted into the middle comes out clean. about 45min -1 hour

10- take out of oven. cool in pan 10min then run a knife around the edge of the pan. Turn the cakes out onto a wire or wooden rack to cool completely. Remove the parchment - sprinkle with powder sugar if you like - EAT THE CAKE!!!!!!!

WHAT THE FUCK IS AQUAFABA?

What is aquafaba you ask? It is the water from you chickpea cans and it's amazing.You separate the chickpeas from the water and use the water for baking ad the chickpeas for yummeh things like hummus - YAY! 🙃 It replaces white and full eggs in recipes as a binding agent, it even whips like egg whites for things like macrons and mouses .

How does one use it?

About three tablespoons of aquafaba equates to one whole egg. Two tablespoons of aquafaba sums up to about one egg white

If you’re using the aquafaba as a binder, lightly whip the liquid until foamy . Only whip it stiff if the recipe calls for whipped egg white or for things like meringue. Aquaafaba is so versatile you not only can bake with it you can even make meringue or even make marshmallows out of it. It takes about 10 to 15 minutes to peak.

1 whole egg = 3 tablespoons aquafaba

1 egg white = 2 tablespoons aquafaba

Aquafaba should be about the same consistency of egg whites to work best. If yours is a bit watery thicken it slightly by simmering it on low in a saucepan on the stove until it’s reduced by about a quarter.
