Summertime Succotash @senseicat

This is one of my favorite healthy easy to create and super colorful dish that make the perfect side dish to any potluck.

You can complete this meal by adding steamed baby bok choy.

1 Tbsp. earth balance butter
1 tsp. olive oil
1 cup diced red onion (I prefer to not include this)
1 garlic clove, minced
1- 10 ounce package frozen baby lima beans, thawed
1 cup of fresh or frozen corn
1 cup of cherry tomatoes, halved
2 Tbsp. chopped fresh parsley
2 Tbsp. chopped fresh basil
1 Tbsp. white or red balsamic vinegar

Heat the butter and oil together in a large skillet over medium-high heat. Add the onion, and saute for 5 to 7 minutes. Add the garlic and cook 1 minute longer.

Stir in the lima beans, and sauce for another 5 minutes. Add the corn and tomatoes, and sauce 1 minute.

Remove from the heat, and stir in parsley, basil and vinegar.

Serve warm or chilled.
