This Sweet Potato Shepherd's Pie is 100% made of wholesome, plant-based ingredients and tastes incredibly delicious π
This is my entry for #fruitsandveggiesmonday this week organized by @lenasveganliving, which is my favorite contest here on Steemit amongst plant-based food lovers.
Shepherd's Pie is a traditional English dish based on meat and I decided to create the healthiest version of it excluding the meat and filling it with absolutely healthy, nutritious ingredients.
Here's the recipe:
Ingredients (for 2-3 servings):
2 red onions, diced
2 cloves garlic, minced
2 spring onions, sliced
4 tomatoes, chopped
3 tbsp tomato puree
8-10 head mushrooms, slived
2 cups kidney beans, cooked
2 cups white beans, cooked
1 tsp sweet paprika
1/2 tsp smoked paprika
1 tsp thyme
salt and pepper to taste
1 lime, juiced
1 large sweet potato
Method
Put the whole sweet potato with skin into a pot, cover with water and boil until soft.
Saute the onions in 4-5 tbsp water until they soften (approx 5 minutes), then add the garlic and paprika and stir it together.
Add all the remaining ingredients - except the spring onions and sweet potato - and cook it on medium heat for 10 minutes. Then turn off the heat and stir in the spring onions.
Put the veggies into a baking tray.
Remove the skin of the sweet potato and mash it with a fork, then place it on top of the veggies.
You can put it in the oven for 20-25 minutes but it is optional. I enjoyed it without baking it :)
Squeeze some lime juice on it before serving.
