Ham and Bean Soup - easy - crockpot (only $1.67 per serving)

Comfort food at it's finest!

My ingredients list is (prices are from our Walmart in Central Pennsylvania):

1 lb. dried Great Northern Beans ($1.37)
1 lb. Ham Steak ($5.00)
1 small Yellow Onion ($0.50)
3/4 cup Brown Sugar ($0.50)
12 oz. frozen Cut Green Beans ($0.84)
1 1/2 lb. Red Potatoes ($1.20)
2 - 32 oz. containers Chicken Broth ($3.96)
3 tbsp Parsley
Salt and Pepper to taste

$13.37 total/8 servings - $1.67 per serving

1 ~ Sort through the beans. Pick and remove all wrinkled or discolored beans and any stones or other items that don't belong.

2 ~ Put the beans in a large bowl, cover them with water, and soak them overnight (at least 8 hours)

3 ~ The next morning, when you're ready to prepare the meal, strain and rinse the beans. Put them in your crockpot.

4 ~ Dice the ham, the onion, and the potatoes. Add them to the beans in the crockpot.

5 ~ Add the brown sugar, the green beans, the parsley, and the chicken broth

6 ~ Salt and pepper to taste

7 ~ Stir thoroughly and set the crockpot to low for 5 hours. This soup is very forgiving and can go much longer if that fits into your schedule better.
