Happy Sunday lovely Steemians 💚

I hope you’re all doing great! For those of you who love to eat bread or crackers I have a really nice and easy recipe today. You can use it as a spread or a dip together with veggies sticks. It’s amazing for a savory breakfast, as a snack or to bring to parties and picnics. This cashew bell pepper spread is vegan, gluten free and suuuper delicious. You need only 6 ingredients - I hope you’ll give it a try 😋

Prep time: 5 min
Portions: 10

Ingredients:

  • 80 g soaked cashews
  • 1 red bell pepper, diced
  • flesh of 1 avocado
  • 1 tomato, skinned
  • fresh or dry herbs like thyme or basil
  • a pinch of salt

Instructions

  • Put all the ingredients into a blender and mix until smooth and creamy.
  • Season to taste and store in the fridge for up to 2 days.
    Normally the spread lasts longer but because of the avocado it goes brown quick, so it’s better to eat it right away.
