Crispy Pata or deep fried pork knuckle

It is a Filipino dish that is an ultimate comfort food that most of us love. Crispy on the outside and scrumptious and juicy meat inside. It is one of the said dish which is labeled as Putok Batok meal.

Putok batok when literally translated in english refers to meals which makes the back of your neck explode. Basically these particular food are very unhealthy due to high cholesterol and mostly fatty and oily food.

Doctors usually advise us not to eat such food to have a healthier and longer life. But even old people couldn’t resist the temptation of this mouth-watering delicious dish.

Most of the people I know would never say no to a crispy pata.

Crispy pata is best served with a sauce dip (chili or not) and rice. If you order this in a restaurant you might consider having unlimited rice. It is also usually served during occasions apart from Lechon. It is also best devoured using your hands when eating. It is definitely finger lickin’ good.

For me the best crispy pata dish is the contrast between the crisp exterior and the juicy meat inside which is very difficult to prepare. I can count only a few which I have tried but most of them either loss its flavor or moisture. Some would freeze it prior to frying which sometimes makes the dish cold inside when you bite.

I have not tried to cook this dish yet but for anyone out here who can share tips in making the outside crunchy and succulent inside. I would love to hear from you.

Well it is a fact that this particular dish is mostly served during any occasion and it is surely one that tops my list even for just an ordinary meal. How about you what particular dish you have on top of your list?
