That's a wrap

A new taste treat that I created recently. I developed it while trying to find an alternative to sausage with peppers and onions.

2 large red bell peppers
1 large onion
1 small zucchini squash
1 T. olive oil
1 pound ground grass fed beef
1/2 t. of Marjoram
1/2 t. Thyme
Salt and pepper to taste.

6 - 10 tortillas of your choice

Prep
Wash and core the red bell peppers. Cut into strips.
Peel the onion. Cut in half then slice thinly.
Peel the zucchini squash. Julianne or cut into matchstick sized pieces.

Heat a large frying pan over medium heat for two or three minute. Carefully add the olive oil to the pan. Add the strips of red bell pepper and saute for about five minutes. Add the thinly sliced onion and the Julianne zucchini squash to the pan with the red bell pepper. Saute the vegetables for another 10 - 15 minutes stirring frequently. Add the spices and mix through the vegetables. Crumble the ground grass fed beef and add to the pan with the vegetables. Stir frequently while the beef cooks through and browns. Salt and pepper to taste. Turn the heat to low to hold.

Warm the tortillas in the oven or in a hot frying pan. Add a couple spoons of the meat mixture to a warmed tortilla and roll into a wrap. Enjoy!

I like to add spicy mustard to the tortilla before the adding the meat mixture.
