Cabbage is one of those vegetables that is extremely underrated in today's home kitchens. It is so incredibly cheap, versatile, and very healthy. With the right techniques and seasoning it can also be very delicious. This is a simple stirfry I made in under 20 minutes and one of my go to recipes during the week in many variations.
1/2 a head of fresh cabbage
1 diced red bell pepper
1 1/2 of cubed chicken breast
1/2 tbsp cajun seasoning
2 tbsp of coconut oil
1/4 cup of white cooking wine
2 tsp of garlic salt
1/2 a diced red onion
1/4 cup minced cilantro
On high heat put the coconut oil until hot and add first the onions, wait 1 minute in between item then add the bell pepper followed by the chicken breast. Cook until chicken is cooked 3/4 of the way through.
While the chicken is cooking remove the core from the cabbage and slice across into strips then cut down the middle to cut strips in half.
Add cabbage in, cook to desired doneness then add in cooking wine, cajun seasoning, garlic salt, cilantro, and cook for another 2-3 minutes then serve.
