This salad is my favorite for this time of the year.
During the Great Lent there are days when we can't eat oil, so I made the dressing with sunflower seeds and that makes this salad perfect.
You will need
some lettuce
some fresh spinach
4-5 spring onions
1 cup cooked corn
for the dressing
1 cup sunflower seeds
2 tablespoons mustard
3 cloves of garlic
some lemon juice
salt
pepper
water
Mix the lettuce, spinach, the spring onion (cut in small pieces) and the corn in a big bowl.
For the dressing, soak the sunflower seeds in warm water for about 15 minutes. Then mix all the ingredients in a blender until you get a smooth paste. Add as much water as it's needed.
